Rice pancake folded in half

Like Bloating fern-shaped cake, rice pancake folded in half is also a street-dish of Da Lat, the ideal cake for rainy days and made of rice which is a precious product of wet rice civilization in Vietnam.
In addition to make of rice, the cake is also made of egg yolk and turmeric powder, shrimp and bacon. They must choose fresh shrimp, bacon is chosen half lean half fat. To balance hot taste, the cake is served with raw vegetables such as: salad, basil, shiso,etc. The sauce is made of pig liver and decorticated peanut with fleshy taste, there is also a fish sauce and chopped garlic, chilli which are mixed in a traditional way. And, beside is rice paper to wrap the cake.

On rainy days, the cake becomes more delicious, it may make people warmer, I think so. Pan is put on the coal stove, when it is hoter, they will pour cooking oil into the pan, pour mixture which is mixed from rice, egg yolk and turmeric powder, chopped bacon and some shrimps. After that, they fold it in half. To have a delicious cake, it not only depends on good ingredients but also the sauce, greasy smell of peanuts, crunchy taste of cake, sweet taste of shrimp and bacon and vegetables. You must eat the cake when it is still hot, no need to use choopsticks, using your hands.
