Ninh Hoa Meat Roll is the common name for fermented pork roll and grilled fermented pork roll of Ninh Hoa town, Khanh Hoa. Fermented pork roll appears thoughout Vietnam but each kind has its own flavor, the sour taste is different from other destiantions of course. So, let's find out why it is so special.

The main ingredient of Ninh Hoa Meat Roll is pork, they choose lean of thighs to make meat roll. It will be constantly pounded, both pound and add sugar, salt. They adjust their power in each appropriate time for pork to be soft and tough. For fermented pork roll, pig skin is an important ingredient, they boil pig skin until well done and leave it dry, take fat out, slice it into fibers. Mixing pounded lean and pig skin together and they are wrapped into leaves, depending on the severity of the yeast that they want it to ferment fast or slow, layer of leaf will be thick or thin. Outside of Ninh Hoa meat roll is wrapped a layer of banana leaf creating a beautiful green for each fermented pork roll. After three days, you will have a good fermented pork roll.

In addition to fermented pork roll, there is grilled fermented pork roll. It is also processed from pounded lean, but it is added more some spices such as: pepper, garlic,etc. Each one is shelved and grilled on coal. To balance the hot taste of fermented pork roll, it is served with rice paper, salad, acrid banana, star fruit, cucumber, shiso, lettuce,etc and a bowl of sauce that is mixed from sugar, salt, garlic, peanut, chili, minced lean meat and other spices. It can be eaten all year round, but it will be more delicious when eating in cold weather.
