The dishes made from fish for Thai people are considered an indispensable dish in the occasions such as: wedding, new house celebration, festival, etc. Fish polony is a delicious and unique dish which is often used in welcoming close guest.
Fish mush be fresh, from half pound or more. If fish is small, fish meat will be less and not delicious. Fish will be removed bones and fish meat will be sliced and soaked into water of sour bamboo shoot in 20 minutes. Or, tearing sour bamboo shoot or squeezing lemon, then mixing.
There are many kinds of spice: roasted rice, pounded ginger, basil, pepper, pounded fresh chili, etc. They mix spices with fish meat and present it on plate and sprinkle grilled fish skin on top, fish skin will increse the fat taste, flavor of the dish. Fish polony is delicious when it is still hot so you must eat immediately. It can be served with boiled rice, steamed sticky rice. You will feel every tastes of spices when eating, it makes you interested. To create weird taste, you can eat with guava leaf or fig leaf. It can be lack of sour soup cooked from fish head, fish tail and sour bamboo shoot. I am sure you will have great experience when enjoying the dish.
