Turtle is a wild animal living in mangrove area and Ca Mau is the ideal place for them. Turtle can be processed into many dishes, one of delicious dishes, it is turtle roasted with salt which is a rustic and nutritious dish of Ca Mau people.
There are many kinds of turtle, but the best choice for this dish is golden turtle. In the past, turtle live so many in the wild, Ca Mau people freely hunted and sold. Recently, to protect wildlife from extinction, Ca Mau has banned hunting wild turtle, just allowed to sell farming turtle. Of course, each kind gives you each feeling, but to protect the wild, you should eat farming turtle.
For man those who like wine, they often pour turtle blood into wine to drink. After cutting turtle neck, they will soak turtle into hot water in a few minutes. They do like that in order to roast turtle with salt, turtle meat will turn into white as chicken meat. To roast turtle, they will use a clay pot to decrease the sound when they roast turtle with salt and use many times. The salt for this dish must be big, the bigger the better, 1 kilogram of turtle - 1 kilogram of salt.
Pour salt into the pot, put whole processed and dried turtle into the pot. Cover the pot as tight as possible. Put it on fire, cook it until you don't listen any sound,take the shell and viscera out. Turtle often eats mushroom, even poisonous mushroom, so they will remove viscera. Finally, they will tear turtle meat and you can enjoy the dish. You can eat the dish with the mixture : salt, pepper and lemon, or salt, chili and laksa leave. It is the simple and delicious dish, right?. But, remember, you shouldn't eat wild turtle. Enjoy.
