The thick, hard and rough rice noodles. They are the characteristic which create the soul for the bowl of noodles. Quang noodle has many kinds such as: Quang noodle with snakehead fish, Quang noodle with pork ribs,etc. But, the most traditional is Quang noodle with shrimp, chicken, egg, meat.
Like pho or bun, Mi Quang is made from rice but it has own special flavor. Starting from selecting rice until water and spices, other ingredients are very specific. Rice is not flexible, high starch content, has to ensure adhesion, soaked for at least 1 hour, then must be mill smooth, coated into thin sheets, stacked and julienne. In oder to stick sheets together, they use oil from peanut, sweep oil on
sheets.
Broth of Mi Quang is cooked from many ingredients depending on kind of noodle that you want to it. Main ingredient of traditional Mi Quang are shrimp and pork. After taking shrimp head, marinate shrimp body with meat, a little of shrimp is pounded and put into the broth to make sweetness.
Vegetables of Mi Quang are special flavor, used vegetables of
Tra Que including young cabbage, basil, curly endive, banana flower. Besides, green onion, green chili, lemon, fish sauce, pounded roasted peanut and rice paper.
Presentation of Quang Noodle has peculiarities. First, put vegetables into bowl. Second, noodle and broth. Third, green onion and cilantro, roasted peanut, rice paper and a green chili with sliced lemon. Unlike Pho, broth of Mi Quang has flavor of shrimp and special ingredients of dish, broth is never flooded over noodles. To have a delicious bowl of Mi Quang, it have to go through many stages as well as accompanied spices, and have to eat when it is still hot.
