"bun oc" (snail with vermicelli) is a famous dish, a rustic and popular dish in Hanoi. That are words which I can use to describe about this dish. You can find "bun oc" easily in Hanoi because it is a rustic dish. But, "bun oc" in West Lake House is the best. It is famous which attracts many diners.
What things make "bun oc" famous like that?
To contribute to a delicious bowl of "bun oc", the first step is considered as an important step, which is choosing snail. Snail must be big and mustn't soak too long. Besides, "bun" must small when eating, it have to crispy and supple but not broken. Some restaurant owners use glutinous rice to increase the flavor for bowl of "bun oc". When boiling snail, they add some salt to keep the sweet taste of snail.
Another indispensable part of "bun oc" that is broth. Spices in the broth are simple, the basic spices include: vinager, seasoning, sugar, salt, chili. Also, some special spices depending on each restaurant. Vegetables and accompanied spices such as:salad, shiso, marjoram, basil, sliced banana flower.
How to cook and eat "bun oc" are simple. They boil snail and take snail from its shell. When eating, just pour water on bun, leave "bun" into bowl, pour broth and snail. Vegetables and some sliced chili increase the flavor of "bun oc". Because of simple, "bun oc" has become a rustic dish in Vietnam in general, Hanoi in particularly.
