Each nation has a traditional dish imbued with its own identity, but not any nation also has a traditional special dish that is both unique and delicious, associated with legend as Chung cake of Vietnam.
According to the legend, in the 6th Hung king, because he wanted the throne passed to his son who is moral enough, talented enough, so Hung King said to his sons that:" Who can find the delicious food to present on tray with good sense, I will pass the throne".
They looked for many delicious foods in country to dedicate to the king. But, unlike the other son, the 18th son of Hung king - Lang Lieu just has Day cake and Chung cake. Hung king tested cake and felt delicious with good sense - the cake symbolizes the earth, so Hung King passed the throne for Lang Lieu.
Therefrom, when Lunar New Year or weddings, funerals, Vietnamese people always do Chung cake to worship ancestors, sky and earth.
The thing makes specific points of the cake, it is ingredient. The cake is made from sticky rice - a beauty of agriculture. Core of cake includes pork that is put into a layer of green bean, adding spices to increase the taste of the cake: a little bit of pepper, a bit of sliced onions.
The cakes is green with the flavor of phrynium that rarely get from any kind of cake. The cake must be carefully pack into many layers of phrynium, because of boiling the cake, water will not go into the cake and the cake will be more delicious. Outside of the cake is tied by bamboo string to create characteristic of the cake.
Chung cake is cooked in a long time, nearly 10 hours so this process makes the flavor of rice, pork, green bean, onion, phrynium, pepper blend together, this create the unique flavor. it is as a philosophy of Vietnamese: living uniformly and helping each other.
Each region has own characteristic, so Chung cake also has difference between the three region in Vietnam, but the cake has still kept own characteristic beauty of Vietnam's Chung cake.
In the trend of integration, traditional Chung cake of Vietnam has presented in all over the world, served as messengers, carried a message of innovation, cooperation and friendship with the world and together towards the future.
