Ho Chi Minh cuisine is extremely rich with typical features of southern cuisine and delicious dishes from the local in the country. Come to Ho Chi Minh(Sai Gon), there are some special dishes that you shouldn't miss.
1. Bun mam(vermicelli sauce), Lau mam( hot pot sauce)
The most delicious Lau mam must be refered to the West(Can Tho, Vinh Long, Long An,etc), but if you don't have time, you can enjoy Lau mam right in Ho Chi Minh. The most important thing of Lau mam's pot is bouillon, it must be processed from the delicious fish sauce(linh - a type of fish). Lau mam in Sai gon is often eaten with spinach, unmoor, okra, mint, banana flower,etc.
Bun mam
Like Lau mam, bouillon is the most important component of this dish. A bowl of bun is not too sweet, too salty or too spicy but not tasteless, indispensable flavor of the sauce.
Eating Bun mam, in addition to slices of fish, roast pork, shrimp, squid, couldn't be miss salad. Some restaurants add scoring thanks to cup of tamarind sauce with attractive acid and sweet.
Bun bo Hue is a favourite dish of Hue people, and it has long been become very popular in Sai Gon. In bouillon of Bun bo, Hue people often add salted shredded meat that contribute to the unique flavor of Bun bo Hue.
3. Lau ca keo(keo fish hotpot)
Lau ca keo has characteristic flavor of the South. Giang leaf is indispensable material in the pot that brings characteristic acid. And, Lau ca keo is served with spinach, unmoor, okra, mint, banana flower,etc like Lau mam. The pot of Lau ca keo will bring to you unforgettable and attractive aroma.
4. Noodles – Noodle with seasoned and sauté beef – wonton
Although this dishes are not from Sai Gon, they have now been become characteristic of Saigon. With Sai Gon people, this dishes are easy to eat and quite popular. However, For the North people, this dishes taste slightly sweet, may not be used while enjoying first. The restaurants that sell this dishes are also available on any street, alley of Saigon.
5. Trang Bang rice paper
This is a dish of Tay Ninh, in addition to rice paper, Trang bang canh cake is also very attractive. Rice paper is eaten with boiled pork, boiled beef, along with lots of vegetables and characteristic sauce of the West of Vietnam.
