Nam O is the name of a fishing village in Da Nang. Because the raw fish here is so good, they named the village name for the dish. To process this dish, they can use cobia, anchovy, etc. But, they often use herring because it has sweetness and firmness, besides, herring lives inshore so it has become a abundant resource. In processing step, they remove head, tail, belly and bone. Then, they split body into two parts and slice them. Before marinating, they squeeze herring to get juice in order to dry fish and make sauce from the juice. After that, they will marinate them with chopped ginger, galangal, garlic and roasted rice. The juice will be mixed with Nam O fish sauce, chili, tapioca starch, seasoning powder.
